Raw Veggie Ceviche

I decided to try something new. I came up with a raw veggie ceviche. My husband LOVED it! Success! Give it a try. It’s super easy.

Here’s the recipe:

  • 1/2 Jicama
  • 1/2 Tomato
  • 1/2 Avocado
  • 1 Corn on the cob
  • 3 Chives – onion part
  • 5 Radishes
  • Cilantro
  • 1 Serrano Chile
  • 2 Limes
  • Salt and pepper

Cut the corn kernels off the cob and rough chop all the veggies. Place all veggies into a large mixing bowl. Squeeze the lime juice into the bowl, add salt and pepper to taste and cover with non-reactive foil. Place in fridge for 2 hours so the juices of the veggies and limes can marinate. ENJOY!
